Remember my post about my diet? Well, I finished a couple of weeks ago and have to say...it was a lovely success. Although at the time I thought I might die from lack of sugar, carbs and chocolate (a category all its own), I now realize what it takes to make a meal healthy.
Surprisingly enough, this involves lots and lots of vegetables. For a girl who is not a huge vegetable fan, this took some adjustment. I'm happy to say, though, that I am excited to try new vegetables (kale anyone?) and some new things with old favorites (artichokes anyone?)!
Here's how we make it healthy:
1 cup almond flour
1 egg white
Sea salt and pepper to taste
Heat up your oven (I like to use the toaster oven) to 400 degrees. Spray a non-stick pan with olive oil spray or regular PAN spray. Cut up your zucchini into pretty thick slices (maybe 1 inch). I think mine were a tad small and ended up cooked a little too long. In a bowl add egg white and 1 tablespoon water. Mix thoroughly. In another bowl, add the almond flour, sea salt and pepper. Dredge your zucchini slices into the egg whites and then cover in your almond flour. Place evenly on the pan and cook for 10 minutes. Turn over and cook for another 5-10 minutes.
